Preparation in All Things

I am a strong advocate of preparing for as much as possible, whether it means preparing for an emergency with great detail or in what is in the vehicle when I take a trip. In my preparing I also work to have things prepared in case I am ill or not at home. I want to make sure that my family can prepare simple meals or snacks that aren't expensive or as heavily laden with preservatives.

So I made a new batch of snacks and thought I would share the recipes.

Sunshine Cookies (original recipe found here)
1 1/3 cups flour
1 tsp. baking powder
1 tsp baking soda
1/4 tsp salt
(at this point I blended the flour, soda, powder, and salt til blended well then continued on)
1 cup cooking oats
1/2 cup M&M's 
3/4 cup chocolate chips
1/2 cup brown sugar
1/2 cup sugar
Be sure to pack each layer down!

Now this is what to do when making the cookies:
Oven 350F
Stir dry ingredients set aside
Mix 1/2 cup almost melted butter with 1 slightly beaten egg, 1 tsp vanilla
Then add dry ingredients to the egg mixture and mix well.
Roll into 1 1/2 balls bake 8-10 min.

 Be sure to label and date the jars

Place on shelf next to other ready mixes!


Second Prepare ahead Mix
Butterscotch Gingerbread Cookies
I found this recipe here and we have not tried this yet, but what can go wrong with Butterscotch Gingerbread anything?
Here goes
1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp ground cloves
1/4 tsp salt
(at this point I blended the mixture so that the spices were evenly distributed)
3/4 cup brown sugar
5 1/2 oz butterscotch morsels(1/2 bag)

When baking the cookies:
Oven 350F
Mix 1/2 cup butter that is slightly melted with 8 tsp molasses and a small egg.
Mix dry ingredients and then pour in egg mixture, blend well.  Drop rounded spoonful on ungreased cookie sheets for 8-10 minutes.

Label and place next to other prepare ahead mixes.
