Ground Beef Elk Molé

Often I switch elk for recipes that call for beef.  Recently, I have found a few that have the Mexican flavors to them that have made the recipes a win.

Molé does require lots of ingredients~
I wasn't sure how it would taste and to be honest,
the photo of the Molé in the pan looked a bit~off color.
I ended up making Molé tacos and Bill loved them.

I made the tacos with corn tortillas softened in a bit of oil.
I served this with Spanish rice, refried beans, salsa, and
romaine lettuce.

I forgot to snap the photo of the tacos put together...
close your eyes~and imagine delicious tacos.
